Polpo: A Venetian Cookbook (of Sorts)* is a treasured, sauce-stained favorite in my kitchen, just as it is for so many others. It’s beautifully written.
Polpo’s philosophy of focussing on humble, honest food aligns perfectly with how I cook at home, every day. I’ve always believed that with recipes, less is often more—it’s best to let the ingredients and the care with which they’ve been prepared do the talking. Collaborating with a restaurant of such legacy has been both an honor and a privilege.
