Preheat the oven to 375F/190C/170C fan and line a baking tray with parchment paper.
Place the dates on a cutting board and using a small, sharp knife make a lengthwise cut from top to bottom. The cut should be deep enough to expose and remove the pit without cutting all the way through.
Fill the dates with small slices of brie and sprinkle with a pinch of cinnamon before wrapping in prosciutto.
Place the dates on the baking tray and bake for approx. 10 minutes until the brie becomes molten and the prosciutto crisp.
Decorate with a drizzle of honey as well as a pinch of bee pollen if desired.
